Step 1

Mix together the orange juice, maple syrup, raisins, butter, cornstarch, minced ginger, garlic powder, salt, pepper and allspice in a sauce pan; cook over medium-high heat whisking every couple of minutes or so until thickened.

Step 2

Add the beets and orange marmalade and cook until heated through.

Step 3

Place in a serving vessel and enjoy!

I normally like beets as an addition to a green salad and this is exactly what I did. Added it to an arugula salad and the peppery-ness of the arugula balanced the sweet of the beets really well. These are yummy and were well enjoyed as a tasty lunch. Due to an individual taste, I think I will add a little less orange marmalade. These were even better the next day.
