"A great sandwich for a light meal! Used with fat free and and low fat items no wonder it's skinny! Servings are how many you want to make. I am using 2. Cook time depends on how long you cook your eggs. For the bread I use the Oroweat Thins."

Step by Step Method

Step 1

Beat eggs with water if you are using it.

Step 2

Cook in a skillet but do not scramble them.

Step 3

Mash avocado and spread equally on each half of bread.

Step 4

When the eggs are done separate them into 2 halves for 2 sandwiches.

Step 5

Lay the cheese on top and fold the egg over the cheese.

Step 6

Divide the ham in half and heat in the skillet.

Step 7

Lay the eggs with cheese on one slice of bread.

Step 8

Lay ham on top of the egg.

Step 9

Put on cover and LOVE IT!

I scaled this back for one sandwich, I also toasted my bread and used 2 slices of cheese; a Monterey Jack and an American cheddar and thoroughly enjoyed a very filling and substantial and as the DH said "if that's a skinny sandwich what does a fat one look like" Thank you kberry, made for Pick Me tag game.
