"I found this in an old community cookbook. Once upon a time, pork cake was a common item in homes. I researched old pork cake recipes and not all of them used citron. It would be possible to leave it out, I believe. If using it, chop up the whole thing, peel and all. This will keep on a shelf, unrefrigerated for an extended time. It is better after sitting for a day. NOTE: The original recipe says to use a slow oven, which is 300° to 325° Fahrenheit."

Step by Step Method

Step 1

Heat your oven to 325° Fahrenheit.

Step 2

Chop the salt pork; discarding the rind.

Step 3

In a large bowl, pour 1 pint of boiling coffee over the chopped salt pork. Let it cool.

Step 4

Next, in another bowl, pour in the molasses. Add the baking soda, whipping it in. Add this mixture to the large bowl.

Step 5

Add in the test of the ingredients, mixing it all together.

Step 6

Bake this in three bread pans for 3 hours. Check it during cooking to make sure it is not burning.

As I didn't make this exactly like specified I left off stars, but will try again with all the correct ingredients! I only had 12 oz of salt pork so used what I had, only about 1 cup of raisins and 1 pound of currants and no cinnamon. I used lemon peel for the citron. I also subbed dark corn syrup for the molasses. I also used regular flour instead of pastry flour. With all these subs this cake/bread still tasted great although I probably should have cooked it for a little less time than indicated. But if I made using all the correct amounts of the ingredients I am sure the timing for the oven would have been right on target, as even with all the subs it was only slightly overdone and burnt just a bit on the bottom. This was definitely an experiment as I have never made bread like this before and it does work! Thanks for sharing!
