Step by Step Method
Step 1
Place the potatoes in a large saucepan and cover with lightly salted water.
Step 2
Bring to a boil.
Step 3
Reduce heat; simmer 20 minutes or until tender.
Step 4
Meanwhile, heat the olive oil in a large skillet over medium-high heat.

Add the corn and saute for 3 minutes or until lightly browned.

Set aside.

Drain potatoes well, saving 1/2 cup water and return potatoes to pan.

Add milk, cream, cheese and butter and mash until smooth.
Step 9
Return to medium-low heat for a few minutes or until thoroughly heated, stirring constantly.
Step 10
Add the corn and cilantro.
Step 11
If needed add potato water.
Step 12
Adjust seasoning to taste.
