Ingredients

The ingredients are:
  • 1/2 cup frozen corn
  • 2 tablespoons olive oil
  • 3 pounds potatoes, peeled, cut into eighths
  • 1/2 cup milk
  • 4 ounces heavy cream
  • 4 ounces oaxaca cheese, shredded
  • 2 ounces butter, softened
  • 1 tablespoon fresh cilantro, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

How to Make

  • Step 1: Place the potatoes in a large saucepan and cover with lightly salted water.

  • Step 2: Bring to a boil.

  • Step 3: Reduce heat; simmer 20 minutes or until tender.

  • Step 4: Meanwhile, heat the olive oil in a large skillet over medium-high heat.

  • Step 5: Add the corn and saute for 3 minutes or until lightly browned.

  • Step 6: Set aside.

  • Step 7: Drain potatoes well, saving 1/2 cup water and return potatoes to pan.

  • Step 8: Add milk, cream, cheese and butter and mash until smooth.

  • Step 9: Return to medium-low heat for a few minutes or until thoroughly heated, stirring constantly.

  • Step 10: Add the corn and cilantro.

  • Step 11: If needed add potato water.

  • Step 12: Adjust seasoning to taste.
