Step 1: Place the potatoes in a large saucepan and cover with lightly salted water.
Step 2: Bring to a boil.
Step 3: Reduce heat; simmer 20 minutes or until tender.
Step 4: Meanwhile, heat the olive oil in a large skillet over medium-high heat.
Step 5: Add the corn and saute for 3 minutes or until lightly browned.
Step 6: Set aside.
Step 7: Drain potatoes well, saving 1/2 cup water and return potatoes to pan.
Step 8: Add milk, cream, cheese and butter and mash until smooth.
Step 9: Return to medium-low heat for a few minutes or until thoroughly heated, stirring constantly.
Step 10: Add the corn and cilantro.
Step 11: If needed add potato water.
Step 12: Adjust seasoning to taste.
