Step by Step Method

Step 1

Add the potatoes to a large pot and fill with cold water and 1 teaspoon of salt.

Step 2

Bring to a boil and simmer until the potatoes are fork-tender, about 30 minutes.

Let cool slightly and peel.

Step 4

Add the onion to a medium-size bowl.

Step 5

Add the water, vinegar, salt,pepper and sugar. Whisk to combine.

Step 6

Slice the warm potatoes to about ¼-inch thick. Place in a large bowl.

Step 7

Pour the onion-vinegar mixture over the warm potatoes.

Step 8

Let the potato salad sit for approximately 30 minutes so that the potatoes can absorb some of the liquid.

Step 9

There will be a little liquid left.

Leave it

Add the mayonnaise and stir gently so not to break the potatoes

Season to taste

Chill overnight

This is very good potato salad without any extras -- simple and good -- perfect. I only had small potatoes so used quite a bit more to get 3 pounds, but still cooked about the same time. Thanks for sharing!
