"This recipe was among my most popular at our prior home. These tuna patties never fail, are an easy-make & always good. They work as the main part of a meal, as a starter course & were also touted as a good option for "Once-a-Month Cooking". Please see NOTE #2 for OAMC instructions. Enjoy!"

Step by Step Method

Step 1

Combine 1st 5 ingredients in a mixing bowl. Add crushed corn flakes until you no longer see any liquid in the mixture, but more is usually better.

Step 2

Divide into 4 equal portions on a cutting board. Shape patties & flatten to 3/4 in thickness.

Step 3

Carefully transfer patties to non-stick skillet & cook over med-low heat in olive oil until golden brown & crisp on both sides.

Note #1: A variety of dry bonding agents can be used. I use crushed corn flakes or crushed Pepperidge Farm stuffing mix. I don't care for the mushy texture of the end-product or the difficulty holding the patties together if potato is used

Note #2: For OAMC ~ TO FREEZE (uncooked patties), prepare recipe thru Prep Step 2. Place patties in a freezer bag w/layers of parchment paper in between. Seal & label. TO SERVE ~ Thaw in fridge or microwave & cook as directed. COOKED PATTIES can also be frozen wrapped in plastic wrap & placed in a freezer bag. Thaw in fridge or microwave & reheat on stovetop or in oven

O'kay I made these with canned red salmon and for 3 patties used about 11 ounces of drained red salmon and once mixing all the other ingredients (I did use a low gi bran cereal instead of cornflakes) I had 480 grams of mix and shaped that into 3 patties which I served with coleslaw and buttered buns and we each made our own burger. Thank you twissis for a recipe for fish patties that does not need mashed potatoes and still had lots of flavour. Made for For You Consideration tag game at FF&F Forums.
