"Very old newspaper clipping from spillville iowa,they would have used lard or butter on farm. (I cut recipe in half and it made plenty ) they did baking once a week and they had lots of kids back then."

Step by Step Method
Step 1
Proof yeast with 1 t sugar and water.
Step 2
Scald milk salt and sugar.
Step 3
Add shortening, let cool. Add to yeast.
Step 4
Add eggs, mace ,zest.
Step 5
Add 4 cups flour beat until smooth, add more flour enough to make a smooth dough. This is the sponge you will add more flour later .
Step 6
Cover let double.
Step 7
Add second set of flour enough to make a soft dough
Step 8
On floured board, roll dough 1/2 inch thick.
Step 9
Cut with round cutter.
Step 10
Place on greased baking sheets, brush with melted fat.
Step 11
Cover and rise until light.
Step 12
Make deep depression in center, and fill with fruit filling (I have many recipes for fillings).
Step 13
Let rise again.
Step 14
Bake in 400 degree oven 15 minutes.
