Step 1: Proof yeast with 1 t sugar and water.
Step 2: Scald milk salt and sugar.
Step 3: Add shortening, let cool. Add to yeast.
Step 4: Add eggs, mace ,zest.
Step 5: Add 4 cups flour beat until smooth, add more flour enough to make a smooth dough. This is the sponge you will add more flour later .
Step 6: Cover let double.
Step 7: Add second set of flour enough to make a soft dough
Step 8: On floured board, roll dough 1/2 inch thick.
Step 9: Cut with round cutter.
Step 10: Place on greased baking sheets, brush with melted fat.
Step 11: Cover and rise until light.
Step 12: Make deep depression in center, and fill with fruit filling (I have many recipes for fillings).
Step 13: Let rise again.
Step 14: Bake in 400 degree oven 15 minutes.
