"The original recipe was devised by my Mom, however I have made it faster with the help of the microwave. I love them as a side with ham or steak! My older daughter adds ketchup to them at the table, whereas the rest of the family eats them without. This recipe is just for two, however my DH could eat it as one serving if I would let him. Also you could use boiled potatoes if you so desire. I have added cayenne pepper to the recipe for those who like it, although we omit it. Enjoy."

Step by Step Method

Step 1

Open can and drain water.

Step 2

Dump potatoes out on a paper towel and blot excessive moisture off and slice in 1/4 slices, then blot excessive moisture off of slices as well. (I use a screen lid to cut down on the spatter).

Step 3

Dice onion.

Step 4

Microwave onion on a paper plate for 2.5 minutes on high.

Step 5

Remove onion from microwave and set aside. (Beware as the onion liquid will be hot).

Step 6

Add tablespoon of margarine and melt it in skillet.

Step 7

Spread melted butter so it coats bottom of the skillet.

Step 8

Place potato slices on to the skillet so each piece is touching the surface.

Step 9

As potatoes brown (golden), turn them over.

Step 10

Add onions and sprinkle the potato onion mixture with garlic powder.

Step 11

(optional) add cayenne pepper.

Step 12

Cook everything for another 10 minutes.

Step 13

If you double the recipe, cook all of the potatoes first before adding the onions.

I made these potatoes on 2/6 for two different tag games," Billboard & Alphabet Tag ". The idea of using canned potatoes and making them into fried,is a very good one.Even though my potatoes didn't get browned as much as I wanted them to (my fault),we still enjoyed them.I do however have a suggestion though after cutting them into slices,blot with a paper towel or two to remove excess moisture.That way there's less chance of the potatoes splattering the butter. Thanks for posting and " Keep Smiling :) "
