"I had a package of Trader Joe's Grilled marinated eggplant and zucchini (mista all griglia) and made this to use it up. If you don't have that, marinate 8 oz each of zukes and eggplant slices in olive oil, lemon and balsamic with some basil and oregano then grill or broil till tender. There are a few ingredients for this salad, but it really is a party in your mouth!"
