Step by Step Method
Step 1
In a heavy saucepan, melt the butter.
Step 2
Add the sugar and dates.
Step 3
Bring to a boil stirring constantly.
Step 4
Boil 2 minutes stirring constantly.
Step 5
Remove from the heat and let cool slightly (approximately 5 minutes).
Step 6
In a bowl, beat the egg, vanilla and milk.
Step 7
Add to the date mixture.
Step 8
Cook on high another 2 minutes, stirring.
Step 9
Remove from the heat and add the cereal and pecans.
Step 10
When cool enough to handle, use your buttered hands to form into 1-inch balls.
Step 11
If you pick up a handful of batter and hold it for a minute or so, it hardens slightly and becomes easier to shape.
Step 12
Roll each one in coconut and let cool completely. These freeze well.
