Ingredients

The ingredients are:
  • 1 stick butter (1/2 cup)
  • 3/4 cup sugar
  • 1/2 pound pitted dates, chopped
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 tablespoon milk
  • 2 1/4 cups Rice Krispies cereal
  • 1/2 cup pecans, chopped
  • Garnish
  • 1/2 cup dried coconut flakes
  • 1 tablespoon butter

How to Make

  • Step 1: In a heavy saucepan, melt the butter.

  • Step 2: Add the sugar and dates.

  • Step 3: Bring to a boil stirring constantly.

  • Step 4: Boil 2 minutes stirring constantly.

  • Step 5: Remove from the heat and let cool slightly (approximately 5 minutes).

  • Step 6: In a bowl, beat the egg, vanilla and milk.

  • Step 7: Add to the date mixture.

  • Step 8: Cook on high another 2 minutes, stirring.

  • Step 9: Remove from the heat and add the cereal and pecans.

  • Step 10: When cool enough to handle, use your buttered hands to form into 1-inch balls.

  • Step 11: If you pick up a handful of batter and hold it for a minute or so, it hardens slightly and becomes easier to shape.

  • Step 12: Roll each one in coconut and let cool completely. These freeze well.
