Step by Step Method

Step 1

Combine beef, beans, oregano, cumin and garlic powder.

Step 2

Place 4 uncooked lasagna noodles in the bottom of a 13×9×2 inch baking pan.

Step 3

Spread half the beef mixture over the noodles.

Step 4

Top with 4 more noodles.

Step 5

Spread remaining beef mixture over.

Step 6

Cover with remaining noodles.

Step 7

Combine water and picante sauce.

Step 8

Pour over all.

Step 9

Cover tightly with tinfoil.

Step 10

Bake at 350° F for 1.5 hours or until noodles are tender.

Step 11

Combine sour cream, onions and olives and spoon over casserole.

Step 12

Top with cheese.

Step 13

Bake uncovered until cheese is melted; about 5 minutes.

My whole family enjoyed this Mexican Lasagna. I cooked the ground beef before I added the beans... I think I was supposed to. Also, I sprinkled the toppings (I used cilantro, diced tomato, sliced black olives & sliced green onions) over the top after the sour cream/cheese had melted. Really easy to prepare, especially using the no-boil lasagna noodles. I checked the casserole at one hour and my noodles were tender, so I didn't go the full hour and a half. Made for the AmaZ'ing Race 2023 (Oaxaca, Mexico).
