"This may well be the 1st time I've been able to admit in print that I've reached an age where recipes made easy, fast & ahead plus multi-functional are now my primary targets for home-style cooking & entertaining. I found the recipe featured in a Yummly email which credited the Renee's Kitchen Adventures blog site where it was described as an "Easy vegetarian snack or light lunch full of good for you veggies!"-- But I think it would also be excellent as a brunch item or bruschetta-type starter course for a dinner meal. Spread hummus on toasted Harvest Blends bread slice. Top w/tomato slices, red onion, cucumbers, feta cheese & black olive slices.

NOTE FROM ME: To a degree, this recipe relies on commercial products (bread, hummus & roasted peppers) which is a major part of its appeal for me. However, I make my own hummus & have 2 recipes for it posted here at Zazz if you care to ck them out. :-)
