Step by Step Method

FOR THE LOAF


Step 1

Preheat oven to 350 degrees F.

Step 2

In a bowl, beat 2 eggs, ketchup, seasoned salt, Worcestershire sauce, mustard and pepper. Add meat; mix well.

Step 3

Incorporate onions and wine soaked bread crumbs and shape into two loaves, about 9" x 3".

Step 4

Bake for 60-70 minutes or until a meat thermometer reads 160-170 degrees.

FOR THE MADEIRA SAUCE


Step 5

Meanwhile, for sauce, melt butter in a saucepan. Add onion then saute.

Step 6

Whisk in flour until smooth.

Step 7

Stir in the consomme, tomato paste, thyme, rosemary and cloves. Bring to a boil. Cook and stir for 2 minutes until thickened, then add wine of beef broth.

Step 8

In a skillet, saute mushrooms until tender.

Step 9

Serve mushrooms and sauce over meat loaf slices.

Superb Meatloaf! Loved everything about the flavor of this meatloaf. The Madeira wine is a must as it gives a flavor that just pulls it all together. I followed as written with some minor changes due to availability; I didn’t have plain seasoned salt, therefore used Montreal seasoning because it is a type of flavored salt, isn’t it. Used ¼ ketchup and ¼ cup of barbecue sauce and added additional onions. For the sauce, I added a dash of Worcestershire at the end and some black pepper. I didn’t have any olives, so had to leave it out, but I bet is would be fabulous here. Wonderfully Delicious meatloaf if there ever was! Thanks so very much, Dienia B, for sharing.
