Ingredients

The ingredients are:
  • FOR THE LOAF
  • 2 large eggs,
  • 1/2 cup ketchup
  • 2 1/2 teaspoons seasoned salt
  • 2 teaspoons Worcestershire sauce
  • 1/4 teaspoon ground mustard
  • 1/4 teaspoon pepper
  • 2 pounds ground beef
  • 1/3 cup chopped yellow onion
  • 1/4 cup wine (Madeira)
  • 3/4 cup dry bread crumbs
  • MADEIRA SAUCE
  • 1/4 cup butter
  • 5 tablespoons all-purpose flour
  • 2 cups beef consomme
  • 1 tablespoon tomato paste
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary, crushed
  • Ground cloves (dash)
  • 1/2 cup wine (Madeira wine)
  • 2 cups sliced fresh mushrooms
  • 2 cups yellow onions, chopped
  • 2 tablespoons chopped olives

How to Make

  • FOR THE LOAF

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: In a bowl, beat 2 eggs, ketchup, seasoned salt, Worcestershire sauce, mustard and pepper. Add meat; mix well.

  • Step 3: Incorporate onions and wine soaked bread crumbs and shape into two loaves, about 9" x 3".

  • Step 4: Bake for 60-70 minutes or until a meat thermometer reads 160-170 degrees.

  • FOR THE MADEIRA SAUCE

  • Step 5: Meanwhile, for sauce, melt butter in a saucepan. Add onion then saute.

  • Step 6: Whisk in flour until smooth.

  • Step 7: Stir in the consomme, tomato paste, thyme, rosemary and cloves. Bring to a boil. Cook and stir for 2 minutes until thickened, then add wine of beef broth.

  • Step 8: In a skillet, saute mushrooms until tender.

  • Step 9: Serve mushrooms and sauce over meat loaf slices.
