Step by Step Method

Step 1

Combine the garlic and potatoes.

Step 2

Using a small ice cream scoop, section out mashed potatoes into balls on a large plate. Place the plate in the freezer for 30 minutes so they will be easier to handle.

Step 3

Heat oil in a small saucepan over med-high.

Step 4

Place beaten egg in one bowl and seasoned bread crumbs in another.

Step 5

Dip potatoes in egg then bread crumb mixture then place in hot oil.

I was delighted to see a local recipe posted for tagging! McGuire's Irish Pub has been in my town forever! (Or so it seems!) Huge steaks and burgers, and home of the reuben eggroll that won an award on food network. These boxty's are different from what you normally get. They are rolled into balls and deep fried in oil. I always did boxtys like latkes, but I have been informed they are not alike at all!! Delicious use of my leftover garlic mashed potatoes,.
