"This is a cake recipe that has been in my family for as long as I remember. A great aunt used to make it for family reunions, I know she passed it to my mother, Mary Lee. It is a quick, easy go to cake for potlucks, family dinners, and when I was younger, it was one of our go to birthday cake requests. My mom passed it on to me, and I have been making this cake at least 20 years, probably more. If you are a chocolate lover, this one is for you, be warned it may become quite addictive."

Step by Step Method

Step 1

To make cake Melt butter or margarine and cocoa powder over low heat, stirring so it doesn't burn.

Step 2

Beat eggs.

Step 3

Stir eggs into cocoa mixture (or use a mixer).

Step 4

Stir in vanilla.

Step 5

Add in sugar, blending well.

Step 6

Sift all dry ingredients together. Add into cocoa mixture, blending well.

Step 7

Pour into a greased 9 x 13 baking pan.

Step 8

Bake at 350 F until done in center, about 30 to 40 minutes.

Step 9

When cake is done, spread marshmallow creme over cake while cake is still hot.

Step 10

To make icing Melt together the butter and cocoa in a saucepan on low.

Step 11

Stir in the confectioner's sugar, stirring well to make sure all lumps are gone. (A whisk works best)

Step 12

Stir in vanilla.

Step 13

Stir in milk if needed, this is a thinnish icing, so milk may be needed if too thick. I add the milk a few drops at a time.

Step 14

Pour hot icing over the marshmallow creme, do all this while cake is still hot. Icing and marshmallow creme will mix, maybe be swirled with a knife for even coverage.

Step 15

Sprinkle chopped pecans over top of cake while warm, then let cool before serving.

I love making desserts and this one is always a winner with my kids and grandchildren. We love the nuts and it really adds to the recipe. This is a classic southern cake that will be around for many generations to come!
