"Such a great condiment to use on vegetables, chicken, beef, or pork. And, this is perfect to make ahead, because it freezes very well. Great to use with grilled or sauteed mushrooms; top steak or chicken; or use in a sauce over pork. Super easy, and takes just a couple of minutes to make. You can use Marsala wine or Sherry - both are equally as good."

Step by Step Method
Step 1
Butter ... Add the butter, wine, shallot, salt, and pepper to the butter; and, mix to combine. I use a good 2 tablespoons of marsala for this recipe. Make sure to taste; and season accordingly.
Step 2
Add the butter mix to a piece of plastic wrap, and roll to form a log. You can also use parchment paper as well. Twist the ends and refrigerate until it firms up (around 2 hours). This can also be frozen at this point - it will last up to 3 months in the freezer. When freezing, I wrap in parchment and then into a freezer bag. You can slice off as much as you need, whenever you need it.
Step 3
Serve and ENJOY! ... As I said - over grilled chicken, pork, beef; and tossed with vegetables too. It is wonderful to entertain with; and, adds that special 'chef' touch to any dish. Just top a steak with a slice of the butter - and let it melt over the top - Delicious!
