"The sweetness of maple syrup and the tartness of mustard combine to make a tasty glaze for pork. This is especially nice in the fall served with mashed sweet potatoes, green beans and an apple dessert. This is my version of a recipe from Sara Buenfeld's Home From Work Suppers. Adjust the seasonings and the doneness of the pork to your taste (as I did)."

Step by Step Method

Step 1

Preheat oven to 350F (180C or gas mark 4).

Step 2

In a small bowl combine garlic, maple syrup, mustard, olive oil, salt and pepper.

Step 3

Place pork loin in roasting pan. Coat pork loin with mixture.

Step 4

Roast for 20-25 minutes per pound or until meat thermometer reaches 150F and juices run clear.

Step 5

Remove pork from oven and tent with foil. Allow to rest for 10 minutes during which time the temperature will rise to 160F and the juices will redistribute so that the roast doesn't become dry when sliced. Slice and enjoy.
