Ingredients

The ingredients are:
  • 2 pounds pork loin
  • 2 cloves garlic, minced
  • 3 tablespoons real maple syrup
  • 1 tablespoon grainy mustard (may substitue Dijon)
  • 2 tablespoons extra virgin olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

How to Make

  • Step 1: Preheat oven to 350F (180C or gas mark 4).

  • Step 2: In a small bowl combine garlic, maple syrup, mustard, olive oil, salt and pepper.

  • Step 3: Place pork loin in roasting pan. Coat pork loin with mixture.

  • Step 4: Roast for 20-25 minutes per pound or until meat thermometer reaches 150F and juices run clear.

  • Step 5: Remove pork from oven and tent with foil. Allow to rest for 10 minutes during which time the temperature will rise to 160F and the juices will redistribute so that the roast doesn't become dry when sliced. Slice and enjoy.
