Step by Step Method
Step 1
In a food processor, blitz macadamias to a rough puree and then add lemon zest and 1 cup coconut, then pulse to combine.
Step 2
Add lemon juice, vanilla, syrup, coconut oil and salt to macadamia mixture and pulse until well mixed, then refrigerate 1 hour or until firm enough to roll.
Step 3
Use a tablespoon to scoop the balls, roll, then toss in extra coconut to coat.
Step 4
Keep refrigerated or pop in the freezer.
Tips
- Rice syrup can be used instead of maple syrup if preferred.
