Ingredients

The ingredients are:
  • 1 cup macadamia nuts (raw unsalted)
  • 1 cup desiccated coconut
  • 3 tablespoons desiccated coconut (extra)
  • 1 lemon, zested
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla essence
  • 2 tablespoons maple syrup
  • 40 ml coconut oil (melted, 2 tablespoons)
  • 1/4 teaspoon sea salt

How to Make

  • Step 1: In a food processor, blitz macadamias to a rough puree and then add lemon zest and 1 cup coconut, then pulse to combine.

  • Step 2: Add lemon juice, vanilla, syrup, coconut oil and salt to macadamia mixture and pulse until well mixed, then refrigerate 1 hour or until firm enough to roll.

  • Step 3: Use a tablespoon to scoop the balls, roll, then toss in extra coconut to coat.

  • Step 4: Keep refrigerated or pop in the freezer.
