Preheat oven to 350 degrees.
Grease and flour baking pan two 9 or 8 inch pans
Combine all ingredients in a large mixing bowl and mix well. Pour into prepared baking pans.
Bake 30 - 35 minutes, or until toothpick inserted in center comes out clean.
For Icing: combine sugar corn syrup and maraschino cherry juice in a small saucepan. Cover and heat to rolling boil on medium heat.
Remove cover and boil without stirring till mixture reaches 245 degrees.
Meanwhile, beat egg whites until stiff peaks form .
Very slowly pour hot syrup in a thin stream into egg whites, beating on high till stiff peaks form.
Add vanilla during last minute of beating.
For Filling: Combine one cup of icing with all filling ingredients
To assemble fill layer with half of the filling
Top cake with remainder of the filling, spreading evenly over top of cake
Frost sides and top of cake with remaining icing
