Ingredients

The ingredients are:
  • 2 cups all purpose flour
  • 1 1/2 cups sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup shortening
  • 1 cup milk
  • 1 teaspoon vanilla
  • 3 eggs
  • Icing:
  • 1/2 cup granulated sugar
  • 1/4 cup light corn syrup
  • 2 tablespoons maraschino cherry juice
  • 2 egg whites
  • 1 teaspoon vanilla
  • Filling:
  • 1/2 cup faked coconut, toasted
  • 1/4 cup pecans, chopped and toasted
  • 1/4 cup blanched almonds,chhhopped
  • 1/4 cup maraschino cherries, drained and chopped

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Grease and flour baking pan two 9 or 8 inch pans

  • Step 3: Combine all ingredients in a large mixing bowl and mix well. Pour into prepared baking pans.

  • Step 4: Bake 30 - 35 minutes, or until toothpick inserted in center comes out clean.

  • Step 5: For Icing: combine sugar corn syrup and maraschino cherry juice in a small saucepan. Cover and heat to rolling boil on medium heat.

  • Step 6: Remove cover and boil without stirring till mixture reaches 245 degrees.

  • Step 7: Meanwhile, beat egg whites until stiff peaks form .

  • Step 8: Very slowly pour hot syrup in a thin stream into egg whites, beating on high till stiff peaks form.

  • Step 9: Add vanilla during last minute of beating.

  • Step 10: For Filling: Combine one cup of icing with all filling ingredients

  • Step 11: To assemble fill layer with half of the filling

  • Step 12: Top cake with remainder of the filling, spreading evenly over top of cake

  • Step 13: Frost sides and top of cake with remaining icing
