Step by Step Method

Step 1

For the dressing: In a small bowl combine mayonnaise, milk, mustard, salt and pepper. Mix well. Cover, and refrigerate at least 30 minutes.

Step 2

Cut ham into 1/2 inch cubes, and set aside.

Step 3

In a large bowl combine potatoes, ham, peas, onion, and thinly sliced red and green pepper.

Step 4

Mix salad dressing into the other ingredients in a large bowl.

Step 5

Refrigerate for at least 2 hours until thouroughly chilled. Serve on lettuce leaves.

Made this from leftover ham to have with dinner tonight. I just tasted it to season it up, if necessary, and it was delicious! We will love it with our burgers off the grill!

One very delicious potato salad that had us coming back for seconds. The ham really packs some flavor and along with the peas and other ingredients it is one fine tasting summertime side!

This is a fantastic potato salad!!! I did not use peas as they are not a favourite and I did not serve it on lettuce as it was being packed away for lunches. We ALL loved it, the slight zest from the mustard goes well with the ham bits.

I recently made this for a BBQ supper I increased it to 1 1/2 amounts, even with increasing there was not any left, I also had to give out the recipe to a few people, thank you LindasBusyKitchen for your help in making the BBQ supper so successful
