Step by Step Method
Step 1
Scrub mussels and remove beards.
Step 2
Steam open mussels in white wine, about 10 minutes. Strain. Set aside.
Step 3
Cook onion and garlic in a little olive oil, until transparent.
Step 4
Add tomatoes, salt, pepper, sugar and thyme. Mix well. Cook for 2 minutes, then turn off heat. Set aside.
Step 5
Arrange mussels in a baking dish.
Step 6
Drizzle with tomato sauce mixture.
Step 7
Top with crumbled Feta cheese.
Step 8
Grill or broil for about 5-7 minutes, until slightly brown and bubbly. If you are broiling them, watch them closely so you don't burn the cheese!
Step 9
Plate them on a pretty serving dish. Sprinkle with chopped parsley, and serve.
