Step by Step Method
Step 1
In a large bowl cream the butter with the sugar until light. Add eggs, beating until light and thick.
Step 2
In a separate bowl sift together the dry ingredients (flour - salt).
Step 3
Put nuts and fruit in a small bowl and then sift about 2 tablespoons of the flour mixture over the dried fruit and nuts; toss and set aside.
Step 4
Sift the remaining flour mixture over the butter/sugar mixture and blend until the batter is smooth.
Step 5
Fold fruit/nuts into the batter.
Step 6
Turn the batter into 2 well buttered and floured loaf pans (3 x 8 inch) or into 1 tube pan.
Step 7
Bake in a 350 degree F. oven for 1 hour or until cake tests done and begins to shrink form the sides of the pan.
