Ingredients

The ingredients are:
  • 1 cup butter
  • 1 cup granulated sugar
  • 5 large eggs (beaten)
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups mixed candied fruit (chopped)
  • 1/2 cup walnuts (chopped)

How to Make

  • Step 1: In a large bowl cream the butter with the sugar until light. Add eggs, beating until light and thick.

  • Step 2: In a separate bowl sift together the dry ingredients (flour - salt).

  • Step 3: Put nuts and fruit in a small bowl and then sift about 2 tablespoons of the flour mixture over the dried fruit and nuts; toss and set aside.

  • Step 4: Sift the remaining flour mixture over the butter/sugar mixture and blend until the batter is smooth.

  • Step 5: Fold fruit/nuts into the batter.

  • Step 6: Turn the batter into 2 well buttered and floured loaf pans (3 x 8 inch) or into 1 tube pan.

  • Step 7: Bake in a 350 degree F. oven for 1 hour or until cake tests done and begins to shrink form the sides of the pan.
