  • When selecting shrimp, make sure to purchase deveined and shelled shrimp for easy preparation.
  • For best flavor, use fresh dill, lemon juice, and garlic in the marinade.

  • Instead of Dijon mustard, use whole grain mustard. The benefit of this substitution is that whole grain mustard has a more robust flavor than Dijon mustard, which can add a more complex flavor to the dish.
  • Instead of olive oil, use avocado oil. The benefit of this substitution is that avocado oil is higher in healthy fats than olive oil, making it a healthier choice for this dish.

Spicy Citrus Grilled Shrimp Combine 1/3 cup minced fresh dill, 1/4 cup fresh orange juice, 1 tablespoon olive oil, 4 teaspoons Dijon mustard, 1/4 teaspoon salt, 1/4 teaspoon sugar, 1/4 teaspoon black pepper, 1 garlic clove, minced, 1 teaspoon cayenne pepper, and 1 pound shrimp (shelled and deveined) in a large zip-top plastic bag; seal and marinate in refrigerator 20 minutes. Remove shrimp from bag; discard marinade. Prepare grill or broiler. Place shrimp on a grill rack or broiler pan coated with cooking spray. Cook for 2-3 minutes on each side or until shrimp is pink.

Roasted Asparagus with Parmesan Cheese:

This simple side dish is the perfect accompaniment to the Lemon-Dill Grilled Shrimp. Roasting the asparagus in the oven with a sprinkle of Parmesan cheese adds a delicious nutty flavor and crunchy texture that pairs perfectly with the shrimp. The Parmesan cheese also adds a salty flavor to the dish, which is the perfect contrast to the lemon-dill marinade.

Roasted Fingerling Potatoes: Roasted fingerling potatoes are the perfect complement to the Lemon-Dill Grilled Shrimp. Roasting the potatoes in the oven with olive oil and herbs gives them a delicious, crisp texture and adds a subtle flavor to the dish. The potatoes provide a hearty side dish that pairs nicely with the light and flavorful shrimp.

We were really please at how this recipe turned out. The lemon, dill and Dijon work really well together and don't overpower the sweetness of the shrimp. This is a keeper.
