"This recipe comes from "Western Star Butter" Australia. This look a lovely creamy sauce that could be served with either chicken or fish. I think garlic or a pinch of dried chili could be added to this sauce, and also most types herbs would compliment this sauce."

Step by Step Method

Step 1

Note: Always use low heat while adding in the butter.

Step 2

Melt 50 grams of the butter in a pan over medium heat; add in the thyme and stir in; add the wine and simmer uncovered until reduced by half the stir in lemon juice and zest

Step 3

Reduce the heat to low, whilst whisking constantly, add the remaining butter 1 to 2 cubes at a time until all the butter has been incorporated and sauce has thickened.

Step 4

Stir through chives and season with salt and the pepper if using.

Step 5

Serve immediately.
