Ingredients

The ingredients are:
  • 200 grams salted Butter, chilled and diced
  • 1/2 teaspoon fresh thyme, minced or chopped finely
  • 1/2 cup dry white wine, (125 milliliters))
  • 1/4 cup lemon juice, fresh (60 milliliters)
  • 2 teaspoons lemon zest
  • 1 tablespoon chopped chives
  • Salt, to taste
  • Pepper, to taste (optional)

How to Make

  • Step 1: Note: Always use low heat while adding in the butter.

  • Step 2: Melt 50 grams of the butter in a pan over medium heat; add in the thyme and stir in; add the wine and simmer uncovered until reduced by half the stir in lemon juice and zest

  • Step 3: Reduce the heat to low, whilst whisking constantly, add the remaining butter 1 to 2 cubes at a time until all the butter has been incorporated and sauce has thickened.

  • Step 4: Stir through chives and season with salt and the pepper if using.

  • Step 5: Serve immediately.
