Step 1: Note: Always use low heat while adding in the butter.
Step 2: Melt 50 grams of the butter in a pan over medium heat; add in the thyme and stir in; add the wine and simmer uncovered until reduced by half the stir in lemon juice and zest
Step 3: Reduce the heat to low, whilst whisking constantly, add the remaining butter 1 to 2 cubes at a time until all the butter has been incorporated and sauce has thickened.
Step 4: Stir through chives and season with salt and the pepper if using.
Step 5: Serve immediately.
