Step by Step Method

Step 1

For the meat sauce: heat some olive oil into a large saucepan over medium-high heat. Add the onions and sauté just until they soften and begin to brown, about 5 minutes. Add garlic and cook for 1 minute. Add the ground beef and sausage meat. Use a wooden spoon to break the meats up into very small pieces and cook until browned and cooked through (15 minutes).

Step 2

Add both cans of tomatoes and their juice, beef broth, oregano, bay leaves and salt and pepper. Stir well and cook for about 1 hour. Taste the sauce and add more salt and pepper if you like during cooking time.

Step 3

To make the cheese sauce: simply mix together all the ingredients listed for the cheese sauce until very well mixed.

Step 4

Preheat your oven to 375°F.

Step 5

Grease a lasagna pan (must have high sides).

Step 6

To assemble the lasagna: layer the ingredients in the pan in this order: 2 cups of the meat sauce, a layer of noodles, half of the cheese sauce, 1/2 cup grated Parmesan cheese, another noodle layer, another meat sauce layer, another noodle layer, the remaining cheese sauce, 1/2 cup grated Parmesan cheese, another noodle layer, the remaining meat sauce, the remaining cheese sauce and finally top with remaining 1/2 cup Parmesan cheese.

Step 7

Cover the pan VERY tightly with a double-layer of foil. Bake for 1 hour.

Step 8

Remove the foil top with 1 1/2 cups (or more) of mozzarella cheese and continue cooking for another 15 minutes.

Step 9

Allow to sit for 20 minutes or more before slicing (the longer you let it site the better or the cheese filling will all run out all over the pan).
