This made a delicious sweet potato as a side for a slice of ham and pineapple rings...it's very easy and quick to prepare...and low cost...made for "Cooking On A Dime" tag game...

I, too, nuked the sweet potatoes first - this was an easy and tasty side dish. Made for SWT2018

Another great recipe from Mikekey! Who knew that sweet potato and fresh ginger would go together so well? This was delicious! Thanks Mikekey! :)

I was in a bit of a time crunch so I microwaved the potato (after stabbing it to death) and then proceeded with the rest of the recipe. I loved the addition of the ginger!! I'll ake them like this many times in future so thank you for posting! Made for Susie's World Tour

I will never get over how the addition of a couple ingredients transforms the flavour of a vegetable. This is what happens to the sweet potatotes when the ginger and bit of brown sugar are added. Wonderful flavour - Easy do-ahead recipe that will be repeated over & over again. This may be my favorite sweet potato recipe ever.
