"You'll will be craving this often once you try it. I sometimes add in some chopped sweet yum yum pickles to the tuna filling also. I recommend making the tuna mixture a few hours ahead to allow the flavors to blend, even better a day ahead, it really does make a different to the flavor. This makes a yummy quick easy weeknight dinner"

Step by Step Method

Step 1

Set oven to broiler heat (I use my toaster oven to make these). In a bowl mix tuna, mayo, lemon juice, celery, green onions and parsley; mix well. Add in seasoned salt and lemon pepper to taste.

Step 2

Place the bread slices on a baking sheet and broil for 1 minute or until lightly toasted. Remove from heat, divide and spread the tuna mixture on top of each bread slice.

Step 3

Place one cheese slice over the tuna, then one tomato slice, then another slice of cheese on top. Return the layered bread to oven and broil for about 3 minutes, or until the cheese is melted. Delicious!

This one is a man pleaser! I received lots of compliments on it. I added chopped jalapeno and served on an onion sandwich bun. Next time I think I'll use pepper-jack cheese.

I don't believe I've ever made a tuna melt sandwich before with Swiss Cheese. It was excellent. And yes, I added some YUM YUM sweet pickles to the tuna like Kittencal!
