Step by Step Method

Step 1

N a small bowl whisk together eggs, baking powder, cream, green onions, salt and pepper until frothy.

Step 2

Heat an 8-inch skillet over medium heat until your hands feel warm when held about 2-inches above the surface; add in butter and swirl to coat the bottom of the pan evenly.

Step 3

Pour the whisked eggs into the skillet; let set slightly.

Step 4

Using a heat-proof spatula, push eggs from edge towards the center; tilt pan to let egg fill the spaces.

Step 5

Repeat until omelet is JUST set (about 1-2 minutes).

Step 6

Sprinkle the grated cheese down the center of the omelet.

Step 7

Using the same spatula, gently fold the omelet over the cheese.

Step 8

Tilt skillet and slide the filled omelet onto a serving plate (don’t worry if you tear the eggs slightly).

I love it when a recipe actually works and this did produce a delicious fluffy omelette that I couldn't wait to sink my fork into. We love them and will have them again and again filled with many different fillers for variety.

The baking powder makes loads of difference! I used 1% milk instead of cream and Pepper Jack cheese instead of cheddar.

Your secret ingredient really works. I always make my omelete base just like your recipe but with 2 tablespoons of cottage cheese added. Then add that bit of baking powder and WOW it really does make a difference. I used white cheddar in the recipe and no whipping cream just milk.. I love your recipes Kitten
