In a small 4-cup food processor mince the anchovies. Add in all remaining ingredients and process until combined.

This has been my go-to Caesar Salad Dressing over the last few years since Kittencal posted it. It's so flavourful and creamy. If you try this, you'll never go back to bottled or any another recipe. As recommended, make this early in the day to let flavours develop, but one would certainly not want to pass up making this if you needed it sooner or right away, as it's sure to surpass other choices. I use anchovy paste, which I store in the fridge solely for this recipe. - 2 eyeballed tube 'squiggles' (2 tsp. or so) in the compact food processor with a couple of plump garlic cloves (or jarred minced garlic in a pinch), then I threw in everything else to pulse. I admit I had to use bottled lemon juice - (current market lemons were extremely poor value for my budget). Fresh grated Parmesan Reggiano also was finely grated into the food processor after the initial ingredients. Poured into a mason jar to refrigerate for a few hours and we'll enjoy this beautiful dressing for a good week or more only if it lasts that long. Our small family custom dresses our own side salads just before serving so there's no waste. A thin bit of cream, milk or easily home made buttermilk can thin the dressing depending on preference. We enjoy it creamy and thick. Homemade croutons are easy to make, but I'd purchased garlic caesar ones for ease. I usually crush them more, as they can be huge. Because we'd made real bacon bits earlier, we added that tasty crunch to our salad. Please do make this salad dressing! As a note, I went without a food processor for awhile, but I've made this successfully with a whisk and a vigorous shake in a jar. It's a keeper in our home. Thanks, Kittencal. I can't believe how tasty this turns out and with so few ingredients!!! I use 1 1/2 teaspoons anchovy paste instead of the fillets. It worked perfectly.
