Step by Step Method

Step 1

In large skillet saute onion in oil until tender on medium low heat for about 10 minutes stirring frequently.

Step 2

Add bell pepper and saute an additional 10 minutes stirring frequently.

Step 3

Add garlic and saute mixture another 2 minutes, stirring frequently.

Step 4

Add 4 tablespoons butter and mix together.

Step 5

Then add flour, mix together and stir fry for an additional 8 minutes stirring frequently.

Step 6

Add lemon juice, and then add milk, stirring frequently and bring to a boil (don’t let milk burn), then reduce to simmer for 15 minutes.

Step 7

Then add mascarpone cheese and lemon zest, stirring frequently producing a nice thick creamy consistency.

Step 8

Add (optional) Old Bay seasoning and mix together.

Step 9

Add 2 tablespoons parsley to mixture and stir together.

Step 10

Add crab and mix together, (salt and pepper to taste), remove from heat, and serve on your favorite pasta.

Step 11

Garnish with fresh chives.

This is delicious, in fact REALLY delicious! I didn't use the Old Bay because the kids were having it with us, but I did sprinkle on a tad right before I served mine and my hubbys. I made a salad to go with it and we proceeded to inhale bite after bite until finished. A most appreciated recipe that will be enjoyed in the future!

I made this as directed, without the old bay seasoning and this was thoroughly enjoyed. Not overly rich, just nice and creamy. Thanks for sharing your recipe!

Engrossed

Yummy! I subbed neufchatel for the marscapone, and canned tuna for the crab. I used creole seasoning in place of Old Bay, and added a little garlic salt. I also added in some fresh asparagus pieces which went perfectly with it. I tossed the sauce with 1lb of penne pasta, and it stuck to the noodles very well, and made for a lovely rich tasting pasta sauce. Made for the Recipebook tag game.
