"These delicious patties can be used for a great meatless burger or a wonderful breakfast paired with eggs and hashbrowns. Instead of the salt I have used many different herbs & spices. My favourite so far is Thai seasoning, which gives lot of flavour with a wee bit of heat. The serving size depends on the size you make the patties."

Step by Step Method

Step 1

Combine quinoa, eggs, Parmesan, chives and salt or seasoning in medium mixing bowl.

Step 2

Heat 2 Tbsp olive oil in skillet on medium heat then sweat onions and garlic, approximately 3 minutes. Add kale to skillet and cook until kale is bright green and soft.

Step 3

Add kale mixture to quinoa mixture, then add breadcrumbs and stir to combine.

Step 4

Place clean skillet on medium heat and add enough oil to coat bottom of pan.

Step 5

Form patties using 1/2 cup of quinoa mixture and place patties in skillet being careful not to splash hot oil or overcrowd the pan.

Step 6

Fry until golden brown on each side, approximately 5 minutes per side.

Step 7

Remove patties, drain on paper towel and serve.

It was pretty good. nice to have something light to eat that was filling. I made half recipe as there is only me to eat and 3-4 days is plenty of anything
