Step by Step Method

Step 1

Preheat the oven to 300ºF.

Step 2

Place one kale leaf on a cutting board. Using a small, sharp knife, cut the middle vein and stem from the leaf and discard. Repeat for the remaining kale leaves.

Step 3

Place a piece of foil into baking sheets then place a wire rack on top of each sheet. Evenly distribute the kale in one layer on each rack. Coat the kale lightly with 4 seconds of olive oil spray, then sprinkle salt and pepper over the kale.

Step 4

Place in the oven and bake until crisp, about 15-20 minutes.

Drizzled a little oil over the kale, rather than using spray, since I don't keep any in the house. These turned out super good, but I wouldn't really classify them as a chip substitute, more of a yummy veggie side dish to go with pretty much any meal or snack (just use your fingers to eat them, like you would fries). I am sure any kind of spice that you like would also be good on these too. I did cook them at 375, I was afraid they wouldn't be crispy enough at 300. This is a definite repeater, and a delicious treat!
