Step by Step Method

Step 1

Slice the beef into strips. Season beef generously with salt and pepper.

Step 2

Cover and let stand 2 hours in cool place.

Step 3

In large skillet, whisk flour and 3 tablespoons butter over low heat until mixture bubbles and forms a smooth paste.

Step 4

Slowly add beef broth, stirring constantly until mixture thickens. Let boil 2 minutes.

Step 5

Reduce heat and add sour cream alternately with tomato juice, still whisking.

Step 6

Simmer slightly 1 minute; do not let boil.

Step 7

In separate skillet, quickly brown beef and onion and mushroom in remaining 1 tablespoon butter over medium heat.

Step 8

Add contents of meat pan to sauce; season with salt and pepper.

Step 9

Simmer very gently or cook over hot water in double boiler 20 minutes.

Scaled this back for the amount of beef (rump steak I had - 10 ounces) but when making again I will only use 2/3 cup of beef broth instead of 1 cup for when I put the meat mix into the sauce it thinned it out to much but was still delicious. The use of tomato juice is a new one for me, as was serving it over edamame bean linguine instead of regular pasta as a low carb option. Thank you Dee made for What's On The Menu tag game at FF&F.
