Step by Step Method

Step 1

Cut boiled eggs lengthwise and remove yolks. Place the cooked egg whites aside.

Step 2

In medium bowl, add egg yolks, mustard, mayo, paprika, cayenne, vinegar, onion, relish, soy sauce, salt and pepper to taste. Mash the yolk mixture until as smooth as possible.

Step 3

Use a piping or ziplock bag, fill it with the yolk mixture. If you’re using a ziplock bag, snip a small cut of the plastic to allow to pipe.

Step 4

Pipe in all the yolk mixture between the egg white shells.

Step 5

Top each egg half with a pinch of bacon bits, a small sprig of fresh thyme, a pinch of smoked salt and a quick grind of pink pepper.
