  • The following recipe serves 2-3 people.

Ingredients

The ingredients are:
  • 3 eggs, hardboiled
  • 1/2 tablespoon prepared mustard (coarse ground or any variety)
  • 2-3 tablespoons of mayonnaise (lite is ok)
  • 1/16 teaspoon paprika (a pinch)
  • 1/16 teaspoon cayenne pepper (a pinch)
  • 1/2 tablespoon vinegar (any variety)
  • 1 teaspoon finely minced onion
  • 3/4 teaspoon pickle relish - sweet or dill
  • 1/4 teaspoon soy sauce
  • 1/8 teaspoon sea salt, or to taste
  • 1/8 teaspoon black pepper, or to taste
  • 1 ounce bacon, cooked crisp and crumbled (you can use about 1 teaspoon real bacon bits)
  • 1 sprig fresh thyme per egg half (small)
  • 1/8 teaspoon smoked salt, to sprinkle on, for serving
  • 1/8 teaspoon freshly ground pink or red pepper corns, for serving

How to Make

  • Step 1: Cut boiled eggs lengthwise and remove yolks. Place the cooked egg whites aside.

  • Step 2: In medium bowl, add egg yolks, mustard, mayo, paprika, cayenne, vinegar, onion, relish, soy sauce, salt and pepper to taste. Mash the yolk mixture until as smooth as possible.

  • Step 3: Use a piping or ziplock bag, fill it with the yolk mixture. If you’re using a ziplock bag, snip a small cut of the plastic to allow to pipe.

  • Step 4: Pipe in all the yolk mixture between the egg white shells.

  • Step 5: Top each egg half with a pinch of bacon bits, a small sprig of fresh thyme, a pinch of smoked salt and a quick grind of pink pepper.
