"A spaghetti sauce made with pot roast a la neapolitan style ,that is carrots and celery in it. You can serve with polenta or pasta, i think you could do this in crock pot"

Step 1

Heat oil in stock pot.

Step 2

Season roast with salt and pepper; brown meat.

Step 3

Add onions, celery, carrots. add tomato paste, dont burn stir alot. Add garlic, herbs, vinegar, add water. Cook for 2 hours until meat is tender and shreds

Step 4

Add mushrooms and tomatoes, turn down to a simmer. Cook for 1 more hour until sauce is thick stirring as needed.

Wow!!! This took a looooong time to cook, but was well worth the result! Such deep and rich flavors! When I told an Italian friend I was making this, he suggested adding a couple of pork ribs, to add even more flavor. Next time!!! I've made what I call "Sunday Sauce" many times over the years, but that recipe card is going into the trash after this! Wow. The flavors here are so concentrated and bright, I will never make it any other way! Make it just as the recipe states...perfection! Thank you dienia, everybody at the table tonight was wowed.
