Step 1: Heat oil in stock pot.
Step 2: Season roast with salt and pepper; brown meat.
Step 3: Add onions, celery, carrots. add tomato paste, dont burn stir alot. Add garlic, herbs, vinegar, add water. Cook for 2 hours until meat is tender and shreds
Step 4: Add mushrooms and tomatoes, turn down to a simmer. Cook for 1 more hour until sauce is thick stirring as needed.
