Ingredients

The ingredients are:
  • 1 pound beef chuck roast
  • 2 tablespoons oil (olive oil)
  • 1 onion,chopped
  • 1 carrot, chopped
  • 2 stalks celery,chopped
  • 1 clove garlic, crush or leave whole
  • 1 tablespoon basil
  • 1 tablespoon parsley
  • 1/4 teaspoon thyme
  • 1/4 teaspoon oregano
  • 1/4 teaspoon rosemary
  • 1 bay leaf
  • 1 tablespoon tomato paste
  • 1 cup fresh sliced mushrooms (optional)
  • 1 tablespoon red wine vinegar
  • 4 cups roma tomatoes, chopped (canned is ok)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 cups water

How to Make

  • Step 1: Heat oil in stock pot.

  • Step 2: Season roast with salt and pepper; brown meat.

  • Step 3: Add onions, celery, carrots. add tomato paste, dont burn stir alot. Add garlic, herbs, vinegar, add water. Cook for 2 hours until meat is tender and shreds

  • Step 4: Add mushrooms and tomatoes, turn down to a simmer. Cook for 1 more hour until sauce is thick stirring as needed.
