Believe it or not, this tastes just like an Italian sub! Although I made a few changes, I believe I kept to the spirit of the recipe. First of all, I had presliced dry sausage, which I quartered. I used grape tomatoes, which I halved. I thought I had ditalini, but didn’t, so I used elbow macaroni instead. For the olives, I used some mixed olives as well as the pimento-stuffed olives, and added a bit more. Finally, for the dressing, I reduced the vinegar to 1/4 cup, since that’s the ratio to 1/2 cup oil that I’m used to. The final result, after chilling for a while, was truly delicious!
