This is great. I added a bit more dressing than called for because it seemed to be a little dry. I've been taking it to lunch all this week. The recipe makes a large amount!! It would be great for a pot luck or cook out. The great thing, is my son is taking it for lunch too. (He doesn't like tomatoes, artichoke hearts, or chick peas.....doesn't seem to notice he is eating them in this salad!!)

Believe it or not, this tastes just like an Italian sub! Although I made a few changes, I believe I kept to the spirit of the recipe. First of all, I had presliced dry sausage, which I quartered. I used grape tomatoes, which I halved. I thought I had ditalini, but didn’t, so I used elbow macaroni instead. For the olives, I used some mixed olives as well as the pimento-stuffed olives, and added a bit more. Finally, for the dressing, I reduced the vinegar to 1/4 cup, since that’s the ratio to 1/2 cup oil that I’m used to. The final result, after chilling for a while, was truly delicious!
