Italian Sausage & Gnocchi Soup

"Easy to make, using packaged gnocchi. Serve with a green salad and crusty bread. I used pork sausage, but you could use the hot italian turkey links."

Step by Step Method

Step 1

Do not remove casings from links. Cook sausage in a large Dutch oven over medium-high heat until just browned, turning them over once. Remove from pan and let cool slightly on a cutting board. Slice links into 1/4 inch slices.

Step 2

Add oil to the same pot and stir in shallot and garlic and cook until the shallot begins to soften.

Step 3

Add water, broth, tomatoes (and their juice), and tomato paste; bring to a boil, reduce heat and simmer 10 minutes.

Step 4

Add sliced links, gnocchi and spinach and cook until the gnocchi float to the top, about 8-10 minutes.

Step 5

Stir in cream and season with salt and pepper, if needed.

Step 6

Ladle into 4 bowls and top each with 1/8 cup grated Parmesan. Serve.

Well worth more than 5 starts. This is my new favorite soup! The sausage I used was Italian chicken sausage and it worked just fine b/c it had the correct seasonings. I used 1/2 and 1/2 for the heavy cream. YUM!

I can see why this made it into someone's best of the year - it is so easy, yet so good. With a rich meaty flavor and a little kick. We used Spanish chorizo and successfully subbed milk for the cream. I would also love to try this with kielbasa. I have never made soup with packaged gnocchi, and it was a great use -gives me lots of new ideas. For the leftovers I decided to squeeze some lemon in, and it was really good that way too. And the parmesan topping went so well.

Sooooo Good! Serious comfort in a bowl, that we went for seconds and thirds! This soup needs no tweaking, its perfect and one of the better soups I've had. Thank you Mikekey for sharing. Made it for DownHomeCooking.

10 Stars! So easy and so delicious! My mistake was not doubling the recipe. This is going into my "keeper" file. I planned on taking a photo after work today but my son ate the leftovers!
